- 1 cup Aunt Jemima® Whole Wheat Pancake mix
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 2 tsp baking powder
- 1/2 tsp cinnamon powder
- 1 cup milk
- 1/3 cup sunflower seed oil
- 1 tsp pure vanilla essence
- 2 apples, peeled cored and (1) diced, (1) sliced
Preheat oven to 400’F (200’C). Line a 12 muffins tray with paper baking cups. Combine all ingredients, but the sliced apple, and give a gentle stir, until dry ingredients are moistened. Using an ice-cream scooper fill in the muffin cups.
With a mandolina (largest cut) slice an apple.
Top each muffin with a slice of apple.
Bake 16-18 minutes or until a toothpick inserted in the center of muffins comes out clean.
Cool in pan for 5 minutes, transfer to a cooling rack.
