Blame it on the lifestyle, blame it on the commercials, in these day and age we all need more fiber in our diet. When we think of fiber we tend to picture a bowlful of bran, hard to swallow and tasteless, thus I came up with this recipe for morning muffins, full of the right amount of fibers; a perfect starter for a busy day.

  • 1 cup (220g) all purpose flour
  • 1/4 cup (56g) Oatmeal
  • 1/4 cup (56g) Wheat germ
  • 1/3 cup (75g) dark brown sugar
  • 2-1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp ground nutmeg
  • 1 tsp ground cinnamon
  • 1 cup buttermilk
  • 2 eggs
  • 1/4 cup (59ml) sunflower oil
  • 2 apples, shredded and peeled

Mix the dry ingredients and set aside. In another bowl mix the buttermilk, eggs and oil; add to dry ingredients.

Stir until dry ingredients are moistened; add apples. Using an ice-cream scooper put the batter into each muffin cup.

Bake at 180’C for 25 to 35 minutes (a toothpick inserted near center should come out clean).
