As many of you know I collect cookbooks, mostly in English; incidentally too many recipes call for buttermilk, which is not easily available in Italy.
I found this simple substitute, that I am going to share with you:

  • Milk (see below but, circa, under one cup)
  • 1 Tbsp white vinegar or lemon juice

Place a Tbsp of white vinegar or lemon juice (preferred) in a liquid measuring cup.  Add enough milk to bring the liquid up to the one-cup line. Let stand for five minute. Then, use as much as your recipe calls for.
