It looks like I have been curry-ed away but for me curry is never too much (I promise I will not add it to a cake…or maybe).

It’s dinner time (almost), Dharma has had a long walk and thus it’s time to fix dinner:

  • 1 pkg (400 gr) frozen cod fillets (thawed)
  • 2 cups carrots (sliced)
  • 1 cup (heaped) frozen peas
  • 1/2 medium onion (chopped)
  • 1 Tbsp ghee
  • 1 Tbsp oyster sauce (Panda Brand)
  • 1 tsp chopped garlic
  • 1 tsp lemon grass powder (alternatively use a whole stalk)
  • 1 tsp cumin powder
  • 1 tsp cardamom pods (crushed, to extract the seeds)
  • 1 tsp ginger powder
  • 1 tsp coriander seeds
  • 1 tsp turmeric powder

In a large pan melt the ghee and sauté the carrots, add the peas and onions and keep on a high heat for 5 minutes; add the spices and the oyster sauce.

Add the cod fillets and carefully (not to brake the fillets) stir the mix. Add 1 cup water, cover and simmer on a very low heat for 15 minutes.

Serve with plain rice or couscous, and a lime quarter.

Alternatively serve with Curried chickpeas and potatoes
