This has occurred to me while I was baking the Best ever Carrot Cake and had realized that was dinner time. You will need:
- 1 pkg puff pastry
- 2 chicken breast fillets (marinated in white dry wine)
- 150 gr ricotta cheese
- pitted green olives (chopped)
- cured turkey breast (sliced)
Heat the oven at 180’C.
In a non-stick pan, brown the chicken fillets, seasoned (add no oil).
Cut the puff pastry disc in half; lay the cured turkey breast slices (two) on each half; mix the chopped olives to the ricotta cheese and spread evenly over the turkey slices. Remove the chicken breast fillets from the pan.
Slice, now the chicken breast fillets and arrange on the cheese mixture. Fold the puff pastry disc on top (you are aiming at a big ravioli shape)
Place on a baking tray and bake it for 20 minutes or until golden brown.
